I read the article on bread-making in disbelief ( Alexander Chancellor , G2, 10 September). If he hadn't disclosed the source of his "recipe", I would have thought he'd found it in a Christmas cracker. I'm 78 and have been baking bread for40 years. I recommend Mr Chancellor gets his hands on The Bread Book , by Linda Collister and Anthony Blake. It contains recipes for 130 delicious breads. Despite being a native Milwaukeean, he was more commonly seen on British bikes, including the Triumph 500 Trophy seen in Happy Days' opening credits. Perhaps he anticipated the company's future woes. As I recall, when the Undertones released their singles album All Wrapped Up in 1983, featuring a cover shot of a woman wearing a "dress" made of different cuts of meat, it was criticised for its sexist imagery, not for offending animal rights activists.
